Fermenting Crock – This crock is for making naturally fermented pickles, sauerkraut, or other vegetables. It is used by filling it with a mixture of vegetables and salt, with added water for some vegetable such as pickling cucumbers. The salt suppresses mold and harmful bacteria while naturally present lactobacillus causes the vegetables to ferment. The fermenting vegetables must be held under the brine with the weight (provided) so they are not exposed to air. the lid helps keep the brine from evaporating and keeps dust and insects our of the crock. Secure the lid further by sliding chopsticks (provided) through the holes in lip of crock.
